A quality Food Safety / Sanitation program will include initial and ongoing training of all your food service staff. The current FDA Food Code requires a Certified Food Protection Manager to be on property during all hours of operation. It is the responsibility of the Person in Charge (PIC) to maintain a valid Food Protection Managers Certificate. The PIC is also required to make sure all staff follow Local, State and Federal Health laws.
